Easy banana bread recipe- quick and ideal for a snack

*Alarm buzzing*….oh no, not again! Morning lectures are never fun…sometimes, if you are lucky enough, you manage to get dressed and have breakfast, but there are days when time is not your friend.

If you have a busy morning, this super easy and tasty recipe will put a smile on your face – it’s tasty, quick, nutritious and student-budget friendly.

Spoiler alert- it’s delicious & can be gluten-free!

For 1 banana bread you will need:

  • 2 cups of flour (1 cup of oats & 1 cup of flour)
  • 1/3 cup of honey (or sugar)
  • 1/3 cup of milk (or water)
  • 4 ripe bananas
  • 2 spoons of oil (coconut, olive, melted butter)
  • 1 spoon of baking powder
  • 1 spoon of bicarbonate soda
  • 2 spoons of cocoa powder (so it’s chocolatey!)
  • 1 spoon of cinnamon
  • 1 pinch of salt
  • Loaf pan

Optional (but recommended)

  • Dark chocolate
  • Dried fruits
  • Nuts, seeds
  • Vanilla aroma

Method:

  1. Preheat the oven to 175°C.
  2. First stir all the dry ingredients together in one big bowl (flour, baking soda & powder, cinnamon, salt, sugar (if not using honey), cocoa powder).
  3. Now mash the bananas and stir them with all the liquid ingredients together in a bowl (milk, honey, bananas, oil).
  4. Mix all the dry and liquid ingredients together.
  5. Chop some chocolate, nuts and dried fruits if wanted and add it to the dough (trust me, you won’t regret putting as much of these as possible inside).
  6. Grease the loaf pan and carefully pour the mixture into the loaf pan.
  7. Put the loaf pan with the banana bread mixture in the oven (175°C) and bake for approx. 60 minutes.
  8. When the banana bread has risen up, the inside isn’t raw and the whole apartment smells like banana bread, it is time to remove it out of the oven.
  9. Let it cool and Bon Apetit!

My personal favorite is having the banana bread with a peanut butter spread on the loaf with some bananas on it. Or you can have it just plain, with some yoghurt, marmalade, Nutella or any other spread.
